Gnocchi salad with dried tomatoes
4 Personen
Preparation time: approx. 20 minutes
• 800g gnocchi (from the cooling)
• 150g dried tomatoes (in oil)
• 2 garlic cloves
• 40g pine nuts
• 2 tomatoes
• 60g Rucola
- Half bunch basil
• 100g olives, seedless
• 10 tbsp. olive oil
• 6 tbs Mazzetti Condimento Bianco
• salt and pepper
02. In the meantime, drain the dried tomatoes and cut them into stripes
03. Peel and chop the garlic.
04. Roast the pine nuts in a pan without fat. Add garlic and fry for about 1 minute.
05. Wash and quarter the tomatoes, remove the seeds and cut the flesh into small cubes.
06. Wash, dry and roughly pluck the rucola.
07. Wash the basil, shake dry and cut the leaves into fine strips.
08. Drain the olives and then cut them in half lengthwise.
09. Mix the gnocchi, dried tomatoes, fresh tomato cubes, olive oil, vinegar, basil and olives in a bowl. Add pine nuts and garlic.
10. Add or mix in the rocket salad and season to taste with salt and pepper.

TIP
Gnocchis sättigen schnell, wie du wahrscheinlich weißt.
Vielleicht weißt du schon vorher, dass der Salat nicht auf einmal gegessen wird.
Dann empfehle ich dir, den Ruccola nicht direkt komplett in den Salat zu geben, weil er z. B. einen Tag bzw. ein parr Stunden später nicht mehr so frisch ist.
Bewahre ihn bis du ihn brauchst am Besten in einem feuchten Handtuch im Kühlschrank auf.
